Tilapia with Kachumbari
Ingredients:
- 1 whole tilapia, cleaned and scaled
- 2 tbsp cooking oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lime (for squeezing)
- For Kachumbari:
- 2 tomatoes, diced
- 1 small onion, thinly sliced
- 1 chili (optional), finely chopped
- 1/2 lemon, juiced
- Fresh coriander, chopped
Instructions:
- Preheat grill or oven. Rub tilapia with oil, salt, and pepper.
- Grill or bake the tilapia until cooked through and slightly crispy on the outside (about 20–25 minutes).
- While the fish cooks, prepare Kachumbari: mix tomatoes, onion, chili, lemon juice, and coriander in a bowl.
- Serve the grilled tilapia on a plate and top with Kachumbari salad.
- Squeeze lime over the fish before serving. Enjoy!
