Ugali, Sukuma & Meat Stew
Ingredients:
- 2 cups maize flour (for Ugali)
- 4 cups water (for Ugali)
- 1 bunch Sukuma (collard greens), chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 500g beef, cut into stew pieces
- 2 tbsp cooking oil
- Salt and pepper to taste
Instructions:
- Start by cooking the beef stew: heat oil in a pot, sauté onions until soft.
- Add beef, brown on all sides, then add tomatoes, salt, and pepper. Simmer until tender.
- For Ugali: bring water to a boil, gradually add maize flour while stirring continuously until thickened. Cook until firm and smooth.
- Sauté Sukuma in a pan with a little oil and salt for 3–4 minutes until tender.
- Serve Ugali on a plate, top with Sukuma and beef stew.
