Traditional Kenyan dish: Ugali, Sukuma, and Meat Stew 🍽️

Ugali, Sukuma & Meat Stew

Ingredients:

  • 2 cups maize flour (for Ugali)
  • 4 cups water (for Ugali)
  • 1 bunch Sukuma (collard greens), chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 500g beef, cut into stew pieces
  • 2 tbsp cooking oil
  • Salt and pepper to taste

Instructions:

  1. Start by cooking the beef stew: heat oil in a pot, sauté onions until soft.
  2. Add beef, brown on all sides, then add tomatoes, salt, and pepper. Simmer until tender.
  3. For Ugali: bring water to a boil, gradually add maize flour while stirring continuously until thickened. Cook until firm and smooth.
  4. Sauté Sukuma in a pan with a little oil and salt for 3–4 minutes until tender.
  5. Serve Ugali on a plate, top with Sukuma and beef stew.
  6. Enjoy your traditional Kenyan meal!
